Hillsborough, NH –

Hillsborough is a picturesque city in New England filled with talented artists, good coffee, unique stores and some of the best state tacos. But our visit to Hillsborough started the way each car trip should – with a cake.

New Hampshire Chronicle

“You can’t come Mom cake Without cake, “said Emi Wynands, a long -standing resident.

Wynands, better known as “Cake Mama”, opened its dream bakery in Hillsborough this year.

“It’s surreal,” she said. “I really can’t believe that I can do this every day, that it is ours, that we finally succeeded.”

She said that the city center was in the midst of an exciting resurgence.

“To see all these stores and buildings that have been vacant and empty for decades now, 20 years old, and seeing them come back to life, seeing people walk around, it’s really good to be part of this, to be part of the establishment of my hometown, you know, back to life,” said Wynands.

She thinks that it started a few years ago with the renovation of the emporium, a building on the other side of the street which houses a number of different stores.

“I think it was just a snowball effect,” she said. “Someone took the ball and started, and from there, everyone wants to be part of it.”

This includes Christine Carr and Paula Kerouac.

“It was incredible. The atmosphere here forms when Chris and I crossed, we knew it was that,” said Kerouac.

They opened the Village art coffee A year and a half ago.

“When we opened the doors, we had people who said:” I’m so happy that you are here. There is nothing here for us, there is no room for us to go “,” said Carr.

They said they liked to consider it as a community center with the coolest lights you have ever seen. People can have pastry and coffee, do work, take an art lesson or simply pass through the unique articles of local artists.

“More people are going out daily. More and more companies move into the city center,” said Carr. “And all these people, like me, get up every day to manage these small businesses, work very hard and open their doors regularly.”

Another open house was at Dreigns of dyeing girls Just opposite.

“Whenever I see something white, it hurts the brain,” said Meeghan Collier. “Like,” give me that. I need to dye it. “”

Necklace has been obsessed with tie shooting for years, and now has a shop in downtown Hillsborough.

“All this city center had been somehow passed for a long time because they have built a bypass. So he bypassed the city center and things collapsed,” said necklace. “We have a lot of great people here who are now reinforcing things.”

The animated stores have been a welcome show for the owner of the local restaurant Adam Mosher, who has called Hillsborough Home for years.

“It’s a great small town, so I think you will see more action, a little more food appears, and it’s always exciting for me,” said Mosher. “I think people complain about competition in a small town in particular, but I say that the more crazy there are.”

In the past decade, Mosher’s Taco beyond has become an essential visit for anyone nearby or passing.

“What we do here is to take a burrito without lettuce, fry until it is golden, then stifle it with Queso,” he said, explaining his chemhanga. “I love feeding people.”

So, if you are looking for an excursion of a day full of good food and unique finds, just go about half an hour west of Concord.

“It’s worth coming here from anywhere,” said necklace. “It’s really not that far.”
