Siman Liu, doctoral student Department of nutritional sciencesreceived a competitive scholarship from the Foundation for Food and Agriculture Research (FFAR).

Liu will receive a total of $ 30,000 over three years as a scholarship holder. FFAR provides half of the funding and external sponsors cover half the remaining half. Liu’s research focuses on how fermentation can transform algae into a probiotic yogurt that supports intestinal health as a lasting food source rich in nutrients.
Algae agriculture is a rapid development industry in New England, including along the Connecticut coast. Algae is an attractive option for many reasons. For example, it has relatively few entries – such as fertilizers or water – compared to other crops. In addition, it sequests carbon and heavy metal pollutants. Algae is also a precious source of important vitamins and minerals such as iodine, tyrosine, riboflavin, thiamine and iron, as well as antioxidants and fibers.
“Algae agriculture is a regenerative and low -entry solution with the potential to improve ocean health and reduce dependence on land agriculture,” said Liu.
Despite this, algae have not yet gained popularity in the United States where it is not a familiar ingredient.
“By incorporating algae into yogurt – a familiar and scalable format – my research helps improve acceptability while improving the nutritional and economic value of local dairy and aquaculture products,” explains Liu.
Liu aspires to ultimately translate this research into an evolving consumption product through a start-up which it plans to establish itself.
“My goal is to build a company that fills science, sustainability and local economic development – starting with algae underused in the coastal farms of Connecticut,” explains Liu.
